Easy Greek Salad Recipe

Greek Salad

A part of our mission at Plates for Change is to share recipes that are easy to prepare, budget friendly, and healthy. Cooking your own meals gives you control over the ingredients you are consuming and is more economical.

This easy Greek Salad is loaded with colorful veggies and takes about 15 minutes to prepare. Kids can help with the prep work, gathering and preparing the veggies and mixing the dressing together.  For a complete dinner, add chickpeas, grilled chicken, salmon, nuts. or any other protein your family enjoys. I like to serve it over greens for an even bigger veggie punch and serve with warm pitas cut into pieces.

Ingredients

2 cups cherry tomatoes (any kind are fine, but unless they are in season, grape tomatoes tend to be more flavorful)

1 English Cucumber, thinly sliced and cut in half

2 cups bell peppers

½ Red Onion, sliced thinly

1 cup kalamata olives

1 cup feta (I like to leave this in a bowl on the side if everyone doesn’t love feta)

 

Dressing

1/4 cup extra virgin olive oil

2 tablespoons red wine vinegar

Sea salt

Black pepper

Juice of a lemon

1 teaspoon dried oregano (or one tablespoon fresh chopped)

 

Mix all of the veggies together and add the dressing.You can serve with several different protein options for everyone to take what they like in bowls or plates.
